Joaquín Cardoso.
He began his professional formation in France; he occupied the job of sous-chef of Jean Francois Piege at the Hotels Crillon and Thomieux and worked in the Iñaki Aizpitarte’s Le Chateaubriand Restaurant. After 13 years, he decides to return to his country to be a part of the team of the Chef Enrique Olvera. Nowadays, he’s the leader of the Carlota Hotel’s kitchen.

Sofía Cortina.
She began working at the Chef Enrique Olvera’s Pujol Restaurant, discovering her passion for baking and service.

She decides to become professional when taking a course in Barcelona and working at the Alberto Raurich’s Dos Palillo Restaurant. She made practices with Pierre Herme in Paris and later returned to Pujol to continue with her current project: the Carlota Hotel’s bakery.
